Winter Time

Right now is the time to keep warm when you go outside.  Always watch the news for the weather and dress appropriately.  If you don't, you can catch a cold or something worse like H1N1 virus. 

Keep enough medication at home, so if you do develop flu like or cold symptoms you can take right away. Wash your hands often to keep bacteria away from the mouth and nose area.

Stress

I have been under stress for some time now.  I lost my Internet connection and have not been able to use the Internet for awhile.  I cannot believe how dependant on the Internet I have become.  I was not able to post any new entries to my blogs.  I have been so stressed that I even started knitting.  I like to keep my blogs as current as possible.

When you are stressed, seems like you always have a headache.  I never take anything for headaches.  I let them go away by themselves.  I don't like to be dependant on medication.  I have enough with the ones I already take. 

Just a small note, to let you know that I am still here.  Hoping that I get my Internet connection soon.

Delicious Chocolate Pudding Dessert

Here is a recipe for chocolate pudding.  If you replace whole milk with skim milk fat will be reduced.  Use egg whites to reduce cholesterol and use lower-fat cocoa powder to replace chocolate. 

It only takes 10 minutes to prepare and 10 minutes to cook.

Serves 4
2        egg whites
1/3     cup unsweetened cocoa powder
2        tablespoons cornstarch
2 1/4  cups skim milk, divided
1/2     cup granulated sugar
1/8     teaspoon salt
1        teaspoon vanilla extract
Fresh strawberries, mint leaves, and unsweetened cocoa powder for garnish.

1-In a small bowl, lightly beat egg whites and set aside.  In a large bowl, combine 2/3 cup of cocoa and cornstarch.  Whisk 3/4 cup of milk into cocoa mixture until completely smooth.

2-In a large heavy saucepan, combine remaining milk, sugar, and salt.  Mix well.  Bring to a boil over high heat, whisking constantly.  Remove pan from heat.

3-Whisk cocoa mixture into hot milk mixture.  Bring to a boil over medium-high heat; boil for 2 minutes, whisking constantly.  Remove pan from heat.

4-Gradually whisk 1 cup of hot cocoa mixture into the egg whites.  Pour mixtureback into pan.  Cook over medium-low heat for 2 minutes, whisking constantly.  Do not boil.  Remove pan from heat.

5-Add vanilla; blend well.  Pour pudding into serving dishes.  Cool to room temperature.  Cover and chill for 1 hour.  Garnish with berries, mint leaves, and cocoa.

Per serving:  Calories 210 (11% from fat)--Carbs 43g--Protein 9g--Sodium 100mg--Fat 3g--Cholesterol 3mg

If you want to prevent a skin on top of the pudding place a wax paper directly on pudding surface.

Calcium Supplements

Calcium is needed to keep bones healthy.  It also keeps your blood pressure and heart beat controlled. The stored calcium is withdrawn as the body needs it.  If not enough calcium is stored, it will begin to use the one in the bones.  That will cause the bones to become brittle and break.

The best way to consume calcium is by eating calcium filled foods.  If you do not get enough calcium from the foods you eat, you should talk to your doctor about taking a calcium supplement. 

The following chart can tell you how much calcium ou need on a daily basis.
    1 to 3 yrs of age          500mg
    4 to 8                          800mg
    9 to 18                      1,300mg
   19 to 50                     1,000mg
   51 and over                1,200mg
If you consume high levels of calcium on a regular basis it may be harmful.  Stay with the recommended level and do not go over 2500 mg per day because it may cause kidney problems.

Attention Deficit Hyperactivity Disorder (ADHD)

Attention deficit hyperactivity disorder (ADHD) and attention deficit disorder (ADD) have symptoms that begin in childhood and continue to adulthood.  Usually, the symptoms cause problems at home, work, school and in relationships.

Doing homework can be a real challenge when a child has ADHD.  If you find some kind of structure for doing homework, it should make it easier for the child to concentrate.

Experts know that people with ADHD have different genes that control the level of some chemicals in the brain.  Not all have a genetic link, but still this condition has been diagnosed in people whose mothers smoked or drank alcohol while pregnant.  Also in those whose mothers had difficult pregnancies. 

 There are three symptoms for ADHD:  inattention, hyperactivity, impulsivity.  For inattention some or all of the following can be present
  • difficulty paying attention to details and tendency to make careless mistakes in school or other activities; producing work that is often messy and careless 
  • easily distracted by irrelevant stimuli and frequently interrupting ongoing tasks to attend to trivial noises or events that are usually ignored by others 
  • inability to sustain attention on tasks or activities
  • difficulty finishing schoolwork or paperwork or performing tasks that require concentration 
  • frequent shifts from one uncompleted activity to another 
  • procrastination
  • disorganized work habits 
  • forgetfulness in daily activities (for example, missing appointments, forgetting to bring lunch)
  • failure to complete tasks such as homework or chores 
  • frequent shifts in conversation, not listening to others, not keeping one's mind on conversations, and not following details or rules of activities in social situations 
For hyperactivity  it is often seen by age seven.  It is a bit different depending on the age level.
  • fidgeting, squirming when seated
  • getting up frequently to walk or run around
  • running or climbing excessively when it's inappropriate (in teens this may appear as restlessness)
  • having difficulty playing quietly or engaging in quiet leisure activities 
  • being always on the go 
  • often talking excessively 
 Impulsivity symptoms include the following:
  • impatience
  • difficulty delaying responses
  • blurting out answers before questions have been completed
  • difficulty awaiting one's turn
  • frequently interrupting or intruding on others to the point of causing problems in social or work settings
  • initiating conversations at inappropriate times
ADHD is diagnosed when the above symptoms occur in two different places like school and home and for at least 6 months.  There are however, some warning signs for ADHD.
  • not listening to instructions
  • being unable to get organized, either at home or at school
  • fidgeting, especially with the hands and feet
  • talking too much
  • failing to finish projects, including chores and homework
  • not paying attention to and responding to details
  • getting poor grades in school
  • being isolated from peers due to poor grades and secondary depression

Chronic Depression

Chronic Depression is a less severe form of depression also called Dysthymia.  The symptoms can linger on for longer periods of time like 2 years or over.  People who have this type of depression can function fine only they seem always unhappy.  Here are the symptoms of this kind of depression:
  • Persistent sad or empty feeling
  • Difficulty sleeping (sleeping too much or too little)
  • Insomnia (early morning awakening)
  • Feelings of helplessness, hopelessness, and worthlessness
  • Feelings of guilt
  • Loss of interest or the ability to enjoy oneself
  • Loss of energy or fatigue
  • Difficulty concentrating, thinking or making decisions
  • Changes in appetite (overeating or loss of appetite)
  • Observable mental and physical sluggishness
  • Persistent aches or pains, headaches, cramps, or digestive problems that do not ease even with treatment
  • Thoughts of death or suicide
Dysthymia is most common in women, but it could start in childhood or adulthood. The Doctor will usually make his diagnosis by the symptoms that the patient describes.  As long as the symptoms have lasted 2 years or more and they are not as severe as Major Depression, then the treatment can begin. 

First, the Doctor will have to be sure that the symptoms are not due to substance abuse or a medical condition.  Also, the depression and other symptoms should be causing distress in your life in order to confirm this type of depression.  There is no blood, x-ray or other lab test to diagnose this depression.


Dysthymia is very serious, but it can be treated.  As with anything health issue, if treated early that can increase the chances of it not being prolonged and get complicated.  Doctors may use counseling, medications or a combination of both to treat chronic depression.

Major (Clinical) Depression

epression, let's talk about depression. If someone is feeling depressed and is not treated it could lead to suicide. If you are feeling depressed make sure to talk to someone you trust as soon as possible. Get help and start treating your depression.


One type of depression is called major or clinical depression. Symptoms are:
  • Fatigue or loss of energy
  • Feelings or worthlessness or guilt
  • Impaired concentration, indecisiveness
  • Insomnia or hypersomnia (too much sleep)
  • Diminished interest or pleasure
  • Restlessness or being slowed down
  • Recurring thoughts of death or suicide
  • Significant weight loss or gain of more than 5% body fat in one month
These symptoms might make it hard to work, study, sleep,eat and enjoy friends and activities. You can have this kind of depression once in your lifetime or several times in your lifetime.

Major depression affect adults, teens, children and the elderly alike. It may go unnoticed and untreated in children and the elderly. It is also said that about twice as many women than men get major depression because of puberty, menstration, pregnancy, miscarriage and menopause. Other factors may include, increased responsibilities at home or at work, juggling kids, careers, commitments, caring for an elderly parent and raising a child alone.

Men can also get major depression, but it is significantly underreported.  Men are less likely to seek help or even talk about it.  Signs of major depression in men may include:  irritability, anger, or drug and alcohol abuse. By not admitting, it can result in violent behavior both inwards and outwards.  Also, can result in an increase of illness, suicide and homicide.

Swine Flu H1N1 Virus

Some of the symptoms of swine flu are:
  • Fever-100F or higher
  • Fatigue
  • Nasal Secretion
  • Cough
  • Headache
  • Nausea
  • Vomit
  • Diarrhea

Some patients also develop severe respiratory symptoms. They would need a respirator to help them breathe.

Other patients may develop pneumonia which is a secondary bacterial infection and if it persists some may develop seizures. If the bacteria reaches the lungs than death could be a possibility if the proper antibiotic is not used immediately.

Two antiviral agents zanamivir (Relenza) and oseltamivir (Tamiflu), both are used to prevent or reduce influenza A and B symptoms. If flu like symptoms have already been present for 48 hours these should not be used.

The best way to not get infected by the virus is to get a vaccine. Go to your doctor's office or to any pharmacy which carry the vaccine. If you are pregnant be sure to not get the nasal vaccine.

Eye Condition--Cataracts

First of all, what is a cataracts? Cataracts is a cloudy area in the lens of the eye. This condition develops very gradually as age progresses and may run in the family. It is not painful, but the affected eye or eyes start to get worse.

Exposure to smoking, toxic substances, and excessive ultraviolet light and sunlight can make cataracts develop even quicker. If you have diabetes and also if you use cortisone medication that also speeds up the cataracts.

Some factors that can develop cataracts:
  • Diseases that cause inflammation or affect metabolism
  • Eye injury
  • Family history
  • Long-term use of corticosteroids or certain other medications
  • Radiation exposure
  • Smoking
  • Too much exposure to ultraviolet light (sunlight)

Visual symptoms of cataracts:

  • Cloudy, fuzzy, foggy, or filmy vision
  • Loss of color intensity
  • Double vision
  • Difficulty seeing at night
  • Problems seeing shapes against a background or the difference between shades of colors
  • Seeing halos around lights
  • Being sensitive to glare

The only treatment for cataracts is surgery.

Need Suggestions For My Son's Condition

My son developed this kind of rash several years ago. It started all of a sudden. He used to play in the backyard all the time. One day this rash started popping on his body. It started on the arms then on his legs. By the time it reached his face it looked like a second layer of skin was on him. It then started to itch.

I took him to the Doctor, but nothing helped him. I have taken him to the emergency room and nothing. They told me that they have never seen something like that. I have also taken him to skin Doctors and allergy Doctors and no one know how to clear it out.

The allergy Doctor did give him Zyrtec and it did help, but we were never told what it was or what he was allergic to. At first my son had to take 2 Zyrtec a day, then it went down to 1.

Two years ago, my husband and kids were on the road to Mexico and as my son was eating a ham and american cheese sandwich, his rash started popping up, so my husband blamed american cheese. He drank lots of water and he started clearing up.

Now it only happens at the beginning of spring for about 2-3 weeks, I give him medication and he stays away from cheese and it does go away.

I just want to know if anyone has ever heard of or seen this kind of rash. I need answers.

Symptoms Of A Stroke

A stroke is caused when a blood vessel in the brain is blocked or bursts. Part of the body controlled by the damaged brain begins to die. You must act quickly to prevent any further damage. For this you must know the symptoms and take quick action.

Some of the symptoms of a stroke are:
  • Sudden numbness, paralysis, or weakness in your face, arm, or leg especially from one side of the body
  • Problems with balance or walking
  • Sudden vision change
  • Drooling or slurred speech
  • New problems with feeling confused, speaking or understanding simple statements
  • Severe headache different than any other

If you have any of these symptoms call 911 or go to the nearest emergency room immediately. Even though, they go away right after. You may have had a mini-stroke called a transient ischemic attack or (TIA). That is a warning that a stroke may be coming.

There are two types of stroke:

  • An ischemic stroke is one which a blood clot blocks a vessel in the brain
  • A hemorrhagic stroke develops when an artery in the brain bursts or leaks

The first thing the Doctor needs to know is what kind of stroke it is. The same medicine cannot be used for both kinds of strokes. If you get immediate attention to this matter the right medicine would be given and you may recover better. The Doctor would order an x-ray called a CT scan of the brain to see either the bleeding or the blockage.

The most important thing to remember is to get medical attention right away.

Old-Fashioned Beef Stew

Serves 6
1 pound lean beef chuck, trimmed and cut into 1-inch cubes
2 tablespoons all-purpose flour
2 teaspoons vegetable oil
2 large yellow onions, thinly sliced about 3 cups
2 cups sliced mushrooms
2 cloves garlic, minced
2 teaspoons reduced-sodium tomato paste
2 cups reduced-sodium beef broth
4 cups sliced carrots
2 medium russet potatoes, thinly sliced about 2 cups
1 cup 1-inch green bean pieces
1 tablespoon cold water
1/4 cup chopped fresh parsley

1 Coat beef with flour, shaking off excess. In a large nonstick pot, heat oil over medium-high heat. Add beef; saute until browned, about 6 minutes. Place on a plate.

2 Add onions and mushrooms to pot; saute for 6 minutes. Add garlic; saute, stirring for 1 minute. Pour off fat. Return beef to pot; stir tomato paste, then broth. Add enough water to just cover; bring to a boil. Reduce heat to low; simmer until beef is tender, about 1 1/4 hours. Skim off any foam.

3 Add carrots, potatoes, and green beans. Cover prtially; simmer for 15 minutes.

4 In a small bowl, mix cornstarch and cold water; stir into stew. Increase heat and boil uncovered for 1 minute. Sprinkle with parsley and serve.

Per serving: Calories 247-19% from fat --Carbohydrates 30 g --Protein 20 g--Sodium 89 mg--Fat 5 g--Cholesterol 45 mg

Preparation Time 25 minutes and Cooking Time 1 3/4 hours

Some Facts About Leukemia

Leukemia is a form of cancer of the blood and bone marrow. The marrow can no longer produce normal blood cells-red and white cells. Anemia is a deficiency of red blood cells which most leukemia patients develop. Lack of white blood cells, impairs the body to fight infections

Mostly males get leukemia. There is a higher risk of leukemia in down syndrome patients or those who have genetic abnormalities. A risk factor of leukemia is exposure to x-rays. Leukemia may also occur as a side effect to other cancer treatments.

Symptoms may include fatigue, paleness, weight loss, repeated infections, fever, bruising easily, and nosebleeds or other hemorrhages. In children, these symptoms can appear suddenly.

Leukemia is difficult to diagnose early because the symptoms are like many other less serious conditions. Tests may include blood, bone marrow aspiration and bone marrow biopsy.

Chemotherapy is the most effective treatment. Antibiotics and transfusions of blood are also used as treatments. In some conditions, bone marrow or stem cell transplantation may be useful for treating some forms of leukemia.

Iron Supplements

Be careful with taking too much iron because it has been linked to death.

Oven Roasted Vegetables

Another great healthy recipe.
1 1/2 pounds assorted cut-up fresh vegetables*
3 tablespoons margarine spread, melted
2 cloves garlic, finely chopped
1 tablespoon chopped fresh oregano leaves or 1 teaspoon dried oregano leaves, crushed
Salt and ground black pepper to taste

* Use any combination of the following: zucchini, red, green or yellow bell peppers, spanish or red onions, white or portobello mushrooms and carrots.

Preheat oven to 450F

In bottom of broiler pan, without rack, combine all ingredients. Roast 20 minutes or until vegetables are tender, stirring once.

Then enjoy.

Let's talk about six food myths that you probably have heard of.

Grapefruit makes fats dissolved. That is false because no food can do this. This food contains sugar and how can that help loss weight. What needs to be done is consume less calories than the energy you are using , so the body uses up the stored fat.

Bread, potatoes and pasta must be cut out of the diet of anyone wanting to lose weight. False again, actually They are important sources of vitamins and minerals. The abuse of those foods and the garnishments like butter, jams, sour cream, sauces and margarine that turn them into high calorie foods.

A banana can replace a steak. False because a fruit made of sugar cannot replace a protein and fat item.

Gelatin hardens your nails. False because gelatin is a protein and that does not affect anything directly like fingernails.

Cheese causes constipation. False because constipation is a result of not taking in enough dietary fiber, water and exercise.

Butter and margarine supply exactly the same number of calories. This is true. There is a major difference between them. Butter has cholesterol and margarine does not.

Why to Include Fiber In Your Diet

Fiber in your diet should be included because as you might already know, helps you be regular. When choosing a cereal make sure to start one with fiber in it. There are also snack bars with fiber. The amount of fiber you should be getting from foods is 30 to 40 grams a day. Many foods have fiber like apples with the skin on, bananas, peaches, whole wheat bread and pasta, avocado, carrots, walnuts, sunflower seeds and many others. If you are not getting enough fiber in your diet then take a fiber supplement. You can find them anywhere you can find supplements.

Weight Loss Program

Like on said on my first post, I lost weight taking supplements and eating right. I will tell you how I lost 20 pounds and have kept it off for the last two years. First of all, make sure to check with your doctor before you start any weight loss program. Make sure you can lose the weight you want to lose. Once you get the OK from your doctor, then you can start your program. There are many programs out there. I can only talk about the one that worked for me.


The program that I used had nutritional meals and supplements. I used the program they have to lose 10-20 pounds. It consisted of a shake mix, vitamins, tablets for cell absorption, tablets for cellulose and an herbal tea for energy and fat burning. The way the program works is you have to substitute two meals for the shake and eat one sensible meal. By sensible meal, I mean eat a smaller portion from what you normally eat. Make sure you have protein, which could be tuna, chicken, egg, peanut butter and many other things. The other very important thing you need to do is drink lots of water. Water helps your body flush out all the things your body does not need. Now you are probably thinking, well I already drink lots of water, but the truth is that we think we are drinking enough and really are not. The minimum amount of water you would need is 96 oz. The maximum amount is measured by your weight. Yes, your weight. Whatever your body weight is that is how many ounces of water you should drink. By following this I lost 20 pounds in the first 3 weeks on the program. Then I lost another 10 in the next month or two. I went from a size 14 pant to a size 8.

Try This Healthy Recipe

Try this soup it is very good and very easy to make.
Brussels Sprout Soup

Be sure to wash the Brussels sprouts well. Let them soak for about ten minutes in water with a little vinegar added.

Makes about 4 cups

2 1/2 cups chicken stock
1/2 cup bacon, cut into pieces
1 cup Brussels sprouts, blanched, quartered
1 garlic clove, finely sliced
salt and pepper

1. In a saucepan, bring chicken stock to a boil and simmer for 20 minutes. Season with salt and pepper.

2. In a skillet, melt bacon and partially cook. Add Brussels sprouts and garlic and cook for 4 minutes. Degrease skillet. Pour bacon and Brussels sprouts into stock. Stir and simmer for 5 minutes. Degrease and serve.

Very simple. Try it and enjoy.
